DATE OF HARVEST

Southern slope of grapes of Madeira harvested by hand on 17 September 2014.

Juice white grape varieties (Vitis vinifera L.);

Pectolytic enzymes;

Dry yeast Selected (Saccharomyces cerevisiae);

Preservatives / Antioxidants (E224, E228, E300 and E330);

Clarifiers / Other (E460, E466 E558, E1202), Must Concentrate Rectified;

Nutrient winemaking, which includes the DAP and thiamine hydrochloride

Gallic tannins.

PHYSICAL AND CHEMICAL CHARACTERISTICS

Total solids: 24.2 (g / l).


VINIFICATION

Fermentation using the selected dry yeast;

Fermentation and storage in stainless steel vats with temperature control;

Tartaric stabilization chemically.
